our restaurant was built on the foundations of three very simple principles.
one, we love sushi.
two, we love a drink
and three, we love a killer beat
put those three together with a misfit kitchen crew that love to bend the rules of conventional cuisine and that’s kimusabi. I mean, we serve sushi, but we’re not your typical sushi bar.
We make our sushi based on what’s fresh, seasonal, and when possible local. Whilst we love fish, we don’t believe in selling or eating them. So if you’re after a California roll with that fake ass seafood extender sh*t, then this ain’t the place for you.
Think salt and pepper oyster mushroom nigiri with a chickpea mayo and teriyaki glaze, or a miso and maple baby eggplant hand roll with scorched cashew cream and a carrot and coriander ‘slaw.
Our food is designed to be enjoyed with a maki roll in one hand and a yuzu margarita in the other
Some people say we’ve vandalised sushi - maybe they’re right? but guess what - we don’t care. We serve what we want, how we want, and if we don’t feel a need to contribute to the destruction of our oceans’ marine life then that’s our prerogative right ?
